Here are the five remaining recipes from the Deseret News Bake-off Bonanza, held in conjunction with the recent Home and Summer Living Show in the Salt Palace. Participants were invited to submit baked goods in a variety of categories.Last week (June 13), recipes were published for Giant Monster Cookies, Adipose Cookies, Caramel Walnut Bars and Chocolate Bar Pie.
Pecan Pie Cookies
1 cup plus 1 tablespoon flour
1/2 cup quick oats, uncooked
1/2 cup butter, softened
3/4 cup firmly packed brown sugar
3/4 cup dark or light corn syrup
1 teaspoon vanilla
1/2 teaspoon salt
1 cup chopped pecans
Preheat oven to 350 degrees. Grease 9-inch square baking pan.
In medium bowl combine 1 cup flour, oats, butter and brown sugar until crumbly. Press into bottom of pan. Bake 15 minutes. Meanwhile, in large bowl beat together eggs, corn syrup, vanilla, salt and 1 tablespoon of flour. Add pecans, stirring in by hand. Pour over baked crust. Bake 25-30 minutes more. Cool on rack. Makes 32-36 bars.
