Tips from the pecan growers of America on one of the nation's favorite holiday nuts:

- Two pounds of in-shell pecans make 1 pound of shelled nuts or 3 1/2 to 4 cups.- Shelled pecans stored in an airtight container will stay fresh in the refrigerator about nine months and in the freezer for two years. Pecans can be refrozen many times without losing quality.

- Toasting pecans intensifies the flavor. Toast in a 350 degree oven on a cookie sheet in a single layer for about 10 minutes. Stir occasionally until pecans are crisp and light brown.

In the microwave, spread 1 cup nuts on a paper plate. Cook on high 2 1/2 to 4 minutes; stir once or twice.
