Backyard barbecued suppers are a mainstay of summer cookery, but there's something extra special about cooking a meal on a grill or over an open fire at a campsite far from home. Here are three kid-tested recipes to entice your family to enjoy a simple meal in the great outdoors.
"Hobo Turkey on a Stick" from reader Colleen Miner of Edina, Minn., is a new twist on preparing ground turkey. Mix together in a bowl: 1 pound ground turkey, 1 egg, 1/2 cup bread crumbs and 1/4 cup ketchup. Press 1/4 to 1/2 cup of the mixture on a debarked stick in a hot dog shape. Grill, turning it occasionally until done. Grasp the cooked meat with a hot dog bun and gently slide the meat off the stick. Serve in the hot dog bun."Hot Dog on a Stick": Stick a hot dog on a debarked twig. Wrap a soft unbaked bread stick (from the refrigerator section of your grocery store) around the hot dog. Place the wrapped hot dog on the grill away from direct heat. Turn it occasionally and grill until the bread is brown and the hot dog is cooked.
"Fruit Kebab": Stick a variety of cubed fruit on a debarked twig. Brush the fruit with lemonade concentrate. Place the skewered fruit on the grill away from direct heat for several minutes until heated through.
