When to add the seasonings? These tips come from a new cookbook, "Moosewood Restaurant Cooks at Home":

- Chopped fresh leaves of cilantro are best added at the end of cooking time.- Add cayenne at the start of cooking, sauteeing it with other primary seasonings such as garlic and onions. Cayenne may taste harsh if added later.

- Adding salt, vinegar, lemon juice or mustard to beans before they are fully cooked will prevent the beans from becoming tender. Add acidic ingredients after the beans are fully cooked.

- If not everyone in your family or among your guests likes hot food, add a small amount of chiles when cooking a dish, but serve a spicy salsa at the table for those who want more heat.
