Here are some ideas for quick breakfasts that you can eat on the run:
Pick-Me-Up Ham 'n' Tortilla Rollups:
Thinly spread lowfat cream cheese on an 8-inch tortilla; place one or two ounces of wafer-thin sliced ham on cream cheese, top with sprouts or chopped lettuce and roll up tortilla. Enjoy with a piece of fresh fruit and a glass of milk.
Tip: Fix the night before, wrap tightly in aluminum foil and refrigerate.
PB&J Breakfast Sandwiches:
Toast English muffin; spread thinly with peanut butter, top each half with a slice of Canadian bacon and thinly sliced apple OR a couple teaspoons of apple butter. Serve with fresh fruit juice.
Cinnamon-Sausage Starters:
Heat precooked sausage patties in the microwave; place on toasted cinnamon-raisin bread with a dab of fruit preserves. Enjoy with a glass of milk and some fruit juice.
Savory Breakfast Custard:
For each serving, beat together one egg and 2 tablespoons of milk with a dash each dry mustard, salt and pepper. Stir in 2 tablespoons grated cheese and 1 ounce of shredded ham. Pour custards into one-cup custard cups that have been sprayed with nonstick coating and bake until firm in a 375 degree oven for 20-25 minutes.
Tip: When making oven meal the night before, bake custards, cover and refrigerate overnight and reheat in the microwave on 70% power for 11/2-2 minutes. Add toast and a beverage.
Cottage Cheese Cooler:
Cut up fresh fruit (nectarines, berries, bananas, oranges) in a medium-size serving bowl; for each serving, top with one-half cup of cottage cheese and sprinkle with crumbled, crisply cooked bacon. Serve with toast and milk.
Kangaroo Breakfast Sandwich:
Toss julienne strips of lean meat (ham, roast pork, smoked turkey) with a nonfat salad dressing and shredded lettuce. Stuff into a pita pocket. Enjoy with your favorite breakfast beverage.
Embellished Egg Salad:
Make your favorite egg salad with reduced- or nonfat salad dressing; mix in crisp bacon bits. Serve on whole wheat bread with a piece of fresh fruit and a glass of milk.
Ham and Waffle Walkaways:
Toast two frozen waffle squares; spread thinly with orange marmalade and top with 2 ounces of lean ham. Place waffles together and eat out of hand.
Ham 'n' Applewich:
Toast English muffin, place slice of favorite cheese on one half and thin slice of ham and thinly sliced apple on the other half; place together and microwave for 30 seconds on High. Serve with a glass of milk.
