Mashed or baked potatoes (not to mention turkey, cranberries and pumpkin pie) have long been staples for Thanksgiving and Christmas dinners in Utah. Yet, in spite of rapid population growth between 1940 and 1995, total annual potato production remains near 60,000 tons.
