Once thought of as an ethnic breakfast favorite in communities with Eastern European populations, bagels have become an all-American breakfast and sandwich-time staple, nearly as widely familiar as mom's apple pie.

According to a spokesman for Bruegger's Bagels, a major national bagel bakery chain, Americans now consume more than 31/2 pounds of bagels per person a year, a 44 percent increase over five years ago.A recent survey showed the plain bagel was the national favorite, followed by onion, blueberry and raisin.

Bagels topped with cream cheese were the top choice among bagel-lovers, with ham and cheese in second place and tuna salad the fourth choice.
