Ann Johnson's Lemon Loaf

Like lemons? You'll love this recipe for its taste and the ease of putting it together. Jazz assistant coach Phil Johnson's wife shares this family favorite.

LEMON LOAF

1/2 cup butter

1 cup sugar

2 eggs

1 1/4 cups flour

1 tablespoon lemon juice

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup milk

1/2 teaspoon vanilla

Grated rind of 1 lemon

1/4 cup powdered sugar

Juice of 1 lemon

Cream eggs, sugar and butter. Alternately add milk and vanilla to egg mixture and to flour-salt-baking powder mixture. Grease one loaf pan and dust with flour. Preheat oven to 350 F. Bake for 50 minutes to 1 hour or until an inserted toothpick comes out clean. Poke holes in the loaf with a toothpick and while still warm, glaze with a mixture of 1/4 cup powdered sugar and the juice of 1 lemon.
