LEMON LOAF
1/2 cup butter
1 cup sugar
2 eggs
1 1/4 cups flour
1 tablespoon lemon juice
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/2 teaspoon vanilla
Grated rind of 1 lemon
1/4 cup powdered sugar
Juice of 1 lemon
Cream eggs, sugar and butter. Alternately add milk and vanilla to egg mixture and to flour-salt-baking powder mixture. Grease one loaf pan and dust with flour. Preheat oven to 350 F. Bake for 50 minutes to 1 hour or until an inserted toothpick comes out clean. Poke holes in the loaf with a toothpick and while still warm, glaze with a mixture of 1/4 cup powdered sugar and the juice of 1 lemon.
