For a reference aid, Instant Culinary Guides are information-filled bookmarks that can be slipped into cookbooks. The slender, fold-out brochures, held in plastic sleeves, come in three versions, offering advice on cooking terms, wines and cheeses, or conversions and substitutions. The guides are $2.50 each at most bookstores. The set of three can also be ordered by mail directly from Barnes & Noble for $7.50, plus $2 for shipping, by calling 1-800-636-0044. (By mail, they do not come in the protective plastic sleeves.)
