Dear Louise: Cookies always have the same problem: When you take out some fat, you lose some crispness.

These cookies are more cakey than the original recipe, but some people prefer that. I decided to make my own version of cake mix so I would know exactly what's in it.


GERMAN CHOCOLATE CAKE MIX COOKIES

1 (18.25-ounce) German Chocolate Cake Mix

1 (6-ounce) package semisweet chocolate chips (I use the mini ones)

1/2 cup rolled oats

1/2 cup raisins

1/2 cup oil

2 eggs, lightly beaten

1. Heat the oven to 350 F. In a large bowl, combine all the ingredients and mix well.

2. Drop dough by rounded teaspoonful 2 inches apart on ungreased cookie sheets.

3. Bake for 8 to 10 minutes or until set. Cool 1 minute; remove from cookie sheets onto racks to cool. Makes 40 cookies.


LOW-FAT DOUBLE CHOCOLATE CHIP COOKIES

2 cups unbleached all-purpose flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup light brown sugar

1/2 cup granulated sugar

1/2 cup oatmeal (rolled or quick)

1 cup mini chocolate chips

1/2 cup raisins

1 egg

2 egg whites

1/4 cup canola oil

3/4 cup nonfat vanilla yogurt

1 teaspoon vanilla extract

1. Preheat the oven to 375 F. Spray cookie sheets with nonstick spray. Set aside.

2. In a large bowl, combine the flour, cocoa powder, baking soda, salt, sugars, oatmeal, chocolate chips and raisins.

3. In a separate bowl, beat the egg and egg whites lightly, then add the oil, yogurt and vanilla. Combine the wet and dry ingredients, stirring just until combined.

4. Drop dough onto the prepared cookie sheets by rounded teaspoonful 1 1/2 inches apart.

5. Bake for 10 minutes, or until set. Makes 48 cookies.

Each cookie contains approximately: Original recipe: 109 calories; 6 gm fat; 9 mg cholesterol; 87 mg sodium; 15 gm carbohydrates; 1 gm protein; 1 gm fiber. Revised Recipe: 74 calories; 2 gm fat; 4 mg cholesterol; 45 mg sodium; 12 gm carbohydrates; 1 gm protein; 1 gm fiber.
