Snowbird, the ski resort, runs a smashing summer season.

Snowbird shovels back its snowy, winter layers to uncover a mountain full of summer activities. The Symphony shows up; jazz, bluegrass and chamber music groups perform. Snowbird sponsors workshops for dancers, photographers, artists and even stargazers.

Coupled with the potpourri of activities at the mountain resort, is an eclectic collection of restaurants.

A guest at Snowbird can dine in elegance at the Aerie atop the Cliff Lodge or grab a light bite at the Spa Cafe.

International cuisine takes off at the Lodge Club, where a gourmet French menu is offered. Visitors can sample Italian food at the Wildflower or a Tex-Mex specialty at the Mexican Keyhole. A variety of light, pick-up items are offered at the Atrium, also in the Cliff Lodge.

For down-home dependability, The Steak Pit is a popular alternative.

For new Snowbird food and beverage director, Ed Serrano, the resort was "irresistible."

The former Las Vegas businessman "stopped to meet a friend at the mountain retreat last summer - and stayed on. I fell in love with the mountains. I saw the Cliff as a landmark with a lot of potential."

Serrano explained that every restaurant can offer a similar menu. To become distinctive in the business, a restaurant must "offer a total experience to the customer. Elements of personal rapport and service make a difference to the diner."

With careful attention to menus and service, Snowbird succeeds in creating an off-season ambience for mountain-escaping guests.

Stop to see the wildflowers. Notice a deer prance by. Listen to the rush of a waterfall.
