Milk in paper cartons tastes better and stays fresher far longer than milk in plastic or glass bottles, according to an Australian study.
Milk samples were placed in refrigerated cabinets similar to those used in supermarkets and exposed to fluorescent light for between six and 48 hours. They were then tasted by 25 people who rated samples according to freshness of taste, presence of decay and overall acceptability.
The study found that milk in cartons retained its fresh taste while milk in plastic and glass developed a decayed flavor.

"This result is probably due to the higher protection offered by the paperboard carton from light penetration," said John Prescott of the Commonwealth Scientific and Industrial Research Organization.
