Most consumers looking for a versatile, tasty source of low-fat complex carbohydrates need search only as far as their pantry. Rice is packed with carbohydrates, contains virtually no fat and provides several vitamins and minerals.
The U.S.A. Rice Council has compiled nearly 100 low-fat recipes using rice in a new recipe booklet called "Light, Lean and Low-Fat" The recipes include appetizers, entrees, breakfast items, side dishes and desserts."These recipes are ideal for those of us looking for great-tasting, light and healthy rice dishes," said Mary-Jo Hogue, test kitchen manager for the Rice Council. "These dishes will please the palate and attract the eye of the most discriminating eater."
In each recipe, 30 percent or less of the calories come from fat and many of the dishes also are low in sodium and cholesterol. Many dishes can be prepared in 30 minutes or less.
