When Craig and Lisa Witham bought the Mexican restaurant Los Hermanos in Provo more than four years ago, they hoped to turn the deteriorating business around and make it a success.

And that's just what they did. The Provo Los Hermanos is doing six times the business it was doing in 1988. It is so successful, in fact, that Los Hermanos has opened a second restaurant in Utah County.A new Los Hermanos opened in Lindon Saturday - with a homey Western atmosphere and all the ingredients for success.

"We concentrate on good service, food and atmosphere. Our good reputation carried over to this new location," Craig Witham said.

The restaurant, at 395 N. State, has the same food and the same prices, but a different decor. A Western motif with fireplaces and a barn out back adorn the century-old home made into a restaurant.

"Historic homes are important around here, so we tried to preserve that look," Witham said.

Popular made-from-scratch menu items include the fajitas and chimichangas. Prices range from $2.95 for a bean burrito to $9.95 for fajitas. Other menu items include seafood enchiladas, smothered chili rellenos and taco locos. For the kids, there's the little amigo - a small dinner for $2.95.

The most popular are the non-alcoholic specialty drinks - like "Diablo Roho" and "Brisa de Mora Negra," made with fruits and ice cream.

"The specialty drinks are unique to Los Hermanos," Witham said.

For dessert, try the empanada - an apple, cherry or peach filling fried crisp in a flour tortilla, fried ice cream or cheese flan.

The Lindon Los Hermanos employs about 40 people.
