Thirty-nine percent of people surveyed knew that the chief problem with Americans' diets is fat, according to a Gallup Poll for In Health magazine.

Thirty-two percent of those surveyed said cholesterol was the biggest problem, 11 percent said pesticides, 9 percent said salt, and the rest said something else. While most federal health authorities have said moderation is the key to improving the diet, 36 percent of those polled said the best way to cut fat to 30 percent of calories is to try to make every meal low-fat. In fact, experts say the overall diet should be low-fat.

Nearly half those polled, 47 percent, correctly cited brussels sprouts, cauliflower and broccoli as vegetables linked to lowered cancer risk.
