SPAM PASTA PRIMAVERA
1 can (12 oz.) SPAM luncheon meat, cut in strips
2 carrots, thinly sliced
1 zucchini, thinly sliced
1/4 cup onion, finely chopped
1 clove garlic, minced
6 tablespoons olive oil, divided
1 package (9 oz.) linguini, cooked
1/2 cup Parmesan cheese, grated
2 tablespoons lemon juice
1/4 teaspoon white pepper
In large skillet, cook SPAM luncheon meat, carrots, zucchini, onion and garlic in 3 tablespoons oil until vegetables are crisp-tender. Toss together linguini, vegetable mixture, Parmesan cheese, 3 tablespoons oil, lemon juice and white pepper until coated. Serve immediately. Serves 8-10.

ENCHILADA BREAKFAST CASSEROLE
1 can (12 oz.) SPAM luncheon meat, cubed
1 small onion, chopped
1 small green pepper, chopped
1 small tomato, chopped
2 cups Cheddar cheese, grated
8 flour tortillas, 7-inch
4 eggs
2 cups whipped cream
1 tablespoon flour
1/4 teaspoon garlic powder
1 can (4 oz.) green chilies, diced
Picante sauce
Place about 1/4 cup SPAM, 1 tablespoon onion, 1 tablespoon green pepper, 1 tablespoon tomato and 1 tablespoon cheese on one side of tortilla. Set remaining cheese aside. Roll up jelly-roll fashion; place seam side down in lightly greased 9-by-13-inch baking pan. In a small bowl, combine remaining ingredients; blend together with wire whisk. Pour over enchiladas. Cover, refrigerate overnight.
Preheat oven to 350 degrees. Bake, uncovered for 40-50 minutes or until egg mixture is set. Sprinkle with remaining cheese. Return to oven; bake for 5 minutes or until cheese is melted. Serve with picante sauce. Makes 8 servings.

COUNTRY RICE SALAD
1/4 cup olive oil
9 green onions, sliced 1/4-inch
1 1/2 teaspoons paprika
1/2 teaspoon cumin
2 cups rice
2 cans (141/2 oz.) chicken broth
1 can (12 oz.) SPAM luncheon meat, cut into strips
1 package (10 oz.) frozen peas, thawed and drained
1/2 cup fresh parsley, chopped
1 package (31/2 oz.) pepperoni, sliced
1 red pepper, cut into 1/4-inch strips
1 green pepper, cut into 1/4-inch strips
In 3-quart saucepan heat oil; add green onion and cook until tender. Add paprika and cumin; stir to blend. Add rice, coating grains with oil. Add chicken stock; stir to combine. Cook over low heat until rice is tender and all liquid is absorbed, about 20 minutes. Meanwhile, in skillet cook SPAM over medium heat, turning occasionally, until heated through. Add peas and chopped parsley to rice mixture. Stir in remaining ingredients; serve at room temperature. Makes 8 servings.

HEARTY BEAN SOUP
2 cups pinto beans, washed and soaked overnight
1 can (12 oz.) SPAM, cubed
1 quart water
2 cans (13 oz.) tomato juice
2 cans (141/2 oz.) chicken stock
1 medium onion, chopped
3 cloves garlic, minced
1/4 cup brown sugar, firmly packed
2 tablespoons chili powder
3 bay leaves
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon thyme
In a 4-quart saucepan add all ingredients; stir to blend. Cook over medium heat until mixture comes to a boil; boil 10 minutes. Reduce heat to low; continue cooking, stirring occasionally until soup is thickened, about 3-4 hours. Remove bay leaves and serve. Makes 6 servings.

SPAM LITE AND CHICKEN TERRINE
1 can (12 oz.) SPAM Lite
5 ounces chicken breast, cooked
8-10 mushrooms, chopped
1/2 cup onion, chopped
1 teaspoon olive oil
1 teaspoon butter or margarine
Salt and pepper to taste
1 sheet frozen puff pastry, thawed
1 egg yolk
1 tablespoon milk
11/2 cups white or light brown sauce or gravy from a package
3 tablespoons sweet red pepper, chopped
3 tablespoons sweet green pepper, chopped
Preheat oven to 400 degrees.
Saute mushrooms and onion in olive oil and margarine. Place sauteed mixture with chicken in food processor. Add salt and freshly ground pepper to taste.
Process to pate' like texture. Slice SPAM horizontally in 4 equal slabs. Build a loaf by alternating SPAM and chicken mixture in layer cake fashion. Wrap loaf in puff pastry, sealing edges with cold water. Whisk egg yolk with milk; brush on pastry-covered loaf. Bake in shallow pan for 25 minutes or until golden brown. Slice thick and serve with choice of sauce or gravy; garnish with chopped red and green pepper. Makes 8 servings.

SPAM-APPLE BRUNCH PIE
1 can (12 oz.) SPAM
2 tablespoons butter
1 onion, coarsely chopped
1/2 cup currants
3 potatoes, peeled and cubed
1/2 teaspoon anise seed
1 teaspoon dry rubbed sage
2 tablespoons sugar
1/2 teaspoon cinnamon
11/3 cups beef broth
2 large golden delicious apples, peeled, cored and sliced
1 cup apple juice
2 tablespoons cornstarch
1/2 pound puff pastry
Cut SPAM in 1/2-inch cubes. Saute in frying pan until slightly browned; remove from pan and set aside. Melt butter in pan; saute onion. Add potatoes, currants, anise seed, sage, sugar, cinnamon, 1 cup beef broth, apples and apples juice. Cover and simmer until potatoes are tender to bit, about 10-15 minutes.
Mix cornstarch with remaining beef broth and stir until mixture thickens. Stir in SPAM and cool.
Pour mixture in a 9-inch pie plate or a souffle dish. Roll puff pastry 1/4-inch thick to fit over the top of the baking dish with a 1/2-inch overhang. Press dough around edge lightly to seal; brush with egg wash. Bake at 450 degrees for 15-20 minutes or until top is lightly browned. Makes 8 servings.
