The standard recipe for vinaigrette dressing follows the principle of 1 part vinegar to 3 parts oil. However, these quantities can vary according to taste and the other ingredients that are used.In a small bowl whisk the vinegar with the salt, pepper and mustard (if using).
Gradually whisk in the oil in a steady stream so the vinaigrette dressing emulsifies and thickens slightly. Taste the dressing for seasoning.
A base of oil, vinegar, mustard, salt and pepper can be kept up to 1 week in a sealed container at room temperature -- add flavorings just before serving.
