TORTILLAS FILLED WITH POSSIBILITIES
People are wrapping, rolling, and folding tortillas like crazy. The flat breads have made it to mainstream cooking - even desserts. September is National Tortilla Month - celebrating the 75 billion tortillas Americans consumed in 1998.For a delicious autumn treat, here's the recipe for Warm Apple Turnovers.
WARM APPLE TURNOVERS
1/4 cup sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/3 cup raisins
1/3 cup low fat granola
2 cups apple pie filling (21 ounce can)
Vegetable cooking spray
6 Mission Fajita-size flour tortillas
Preheat the oven to 400 degrees F. In a medium bowl, combine the apple pie filling and raisins.
Place tortillas on work surface and spoon about 1/3 cup apple filling onto one half, leaving a 1/2-inch edge. Brush edge with water and fold in half. Firmly crimp tortilla edge with fork, flip over and crimp other side.
Place turnover on a sheet pan and lightly spray tops with cooking spray. In a small bowl, combine sugar, cinnamon and nutmeg. Sprinkle sugar mixture over turnovers. Top each turnover with a heaping teaspoon of granola.
Bake for about 15 minutes or until golden brown. Serve warm. Makes 6 servings.
