In Utah, nothing, jam enterpreneur Wayne Parke says.

But in some states the word "fancy" legally means that the product is the highest in quality and that it meets certain requirements.

Here's how it breaks down:

A spread is more water and sugar with little fruit.

Preserves have more fruit, but not as much as a fancy jam.

A fancy jam is the highest in quality and loaded with fruit.

A jelly has no fruit pulp in it but is made of fruit juice.

"It is the lawmakers who make the laws, but they don't know much about food," Parke said.
