Blackened Tilapia Sandwich with Cilantro Lime Aioli

Makes 18 half-cup servings

Ingredients:

1/4 cup paprika

2 tablespoons thyme

2 teaspoons onion powder

1 teaspoon garlic powder

1 teaspoon salt

1/4 teaspoon ground red pepper

1/2 cup butter, melted

4 10-oz tilapia fillets

4 kaiser buns

In a shallow dish, combine paprika, thyme, onion and garlic powder, salt, and ground red pepper. Dip the tilapia fillets in melted butter, and then coat with the seasoning. Heat a cast-iron skillet over medium-high heat. Cook the prepared fish in batches, 3 to 4 minutes per side or until the fish will flake with a fork. Butter and toast the buns, and spread the cilantro lime aioli evenly over the toasted buns. Place the blackened fish on buns and top. Also great topped with coleslaw.

Cilantro Lime Aioli

1 cup mayonnaise

1/4 cup freshly chopped cilantro leaves

1 tablespoon lime juice
