Lemon-Marinated Salmon

Makes 6 servings

Ingredients:

2 lbs salmon steaks or fillets

1 cup water

1/2 cup lemon juice

1/3 cup sliced green onion

1/4 cup vegetable oil

3 Tablespoons snipped parsley

3 Tablespoons chopped green pepper

1 Tablespoon sugar

2 teaspoons dry mustard

1/8 teaspoon cayenne pepper

1/2 teaspoon salt

Place fish on greased rack in a large skillet or fry pane Pour in 1 cup water. Cover with a lid and steam for 5 to 7 minutes, or until fish is done and flakes easily when tested with a fork. Remove from a pan to a shallow dish. Place the remaining ingredients in a screw-top jar and shake vigorously to combine; pour over fish. Cover and chill several hours or overnight, spooning marinade over fish several times. Drain before serving. Serve cold.
