PROVO — When the Provo Food Truck Roundup began in December 2013, it featured just four trucks and freezing temperatures.

Now, it's a weekly Thursday evening event from 6 to 9 p.m that runs from mid-March to mid-December.

Anders Taylor, his wife, Courtney Taylor, and Christian Faulconer came up with the idea while working at The Startup Building in Provo, a hub for startup companies and co-working space.

"The food trucks scene just really exploded around here," Anders Taylor said. "We were inviting almost every food truck we knew of."

During the summer, the roundup features about 16 to 20 trucks per week. One week, there were 28, Taylor said. In the future, the roundup will operate from the beginning of March to mid-December.

Rob Pierce, who owns the food truck Smokin Roadside Grill along with his wife, Cassandra, said, "A lot of foods that come out of food trucks are better than restaurants."

The Pierces recently moved to Utah from Portland. This is their first season with a food truck, but they have been catering for fifteen years.

Cassandra Pierce said her favorite part about owning a food truck is being able to take their food to lots of different people.

"It’s not just like a restaurant," she said. "We can go anywhere and share our food with everyone, and seeing just all the different people, that they like seeing that they could get a little bit here, a little bit there, at all the different food trucks, they don’t have to just order their meal from us, it’s kind of fun to watch."

People can preview the food trucks that will be on hand on the roundup's Facebook page every week.

Taylor said the roundup is a great place to go with friends because "you don’t have that conversation of 'Where should we go get dinner?'

"You just come here," he said. "Everybody can eat something different, but you can still hang out."

About 1,500 people show up every week, according to roundup manager Marc Harris. Some people bring their dogs on leashes to enjoy the outdoor event.

Food isn't the only thing available. In the past, the roundup has featured a clothing boutique from Mexico, and local bands periodically play music while people eat.

Spotted at the event was BYU basketball player Zac Seljaas, who will be suiting up for the Cougars this fall after returning from an LDS mission in Des Moines, Iowa.

"This is my first time here," he said. "It’s awesome. It's cool to see all these food trucks, you know, just all those people coming together, it's pretty awesome."
