DEER VALLEY DELIGHTS

Our own Park City Resort, known the world over for its culinary excellence, has now made it easy to enjoy its fine food even when you're off the slopes.

"DOLE" THIS OUT

In 29 minutes (20 prep time, 9 bake time), you can whip up this one:

BANANA "CANNOLI" CUPS

Filling:

8 ounces ricotta cheese

8 ounces lowfat cream cheese

1/4 cup sugar

2 tablespoons mini chocolate chips

2 tablespoons chopped marascino cherries

2 firm, large Dole Bananas, peeled, diced

Cups:

1 package (15 ounces) refrigerated ready pie crusts

1 egg

1 tablespoon water

2 tablespoons plus 2 teaspoons sugar

1/2 teaspoon ground cinnamon

Filling: Beat ricotta, cream cheese and sugar until smooth. Fold in chocolate chips, cherries and bananas.

Cups: Using a 4-inch cookie or biscuit cutter, cut out 5 circles from each pastry sheet. Beat together egg and water. Lightly brush pastry circles with egg mixture. Mix sugar and cinnamon. Sprinkle over pastry. Place pastry circles in muffin cups. Flute edges; prick bottoms with fork. Bake in 450 degree over 8 to 9 minutes. Cool. Fill cups evenly with filling. Serves 10.
