Poor Man Bars
Ingredients:
1 cup raisins
2 cups water
1 cup sugar
1/2 cup shortening
1 egg
1/2 tsp. salt
2 cups flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. allspice
Preheat oven to 350-degrees. Grease and flour a jelly roll pan (approx. 10x15 or 12x17).
Place raisins and water in a small saucepan, boil until half the water is gone. Remove from heat and allow to cool while mixing the other ingredients. Cream sugar and shortening; add egg and beat well. In a separate bowl mix all the dry ingredients, and then add the mixture to the creamed mixture. Stir in slightly and add raisins and water. Stir until mixed. Spread thinly on prepared pan. Bake 25-30 minutes. Allow to cool slightly and frost with the following.
Frosting
2 cups powdered sugar
2-3 Tbs. half and half, cream, or evaporated milk
1 tsp. vanilla
