NORTH SALT LAKE — Kneaders Bakery & Cafe broke ground this week for a location at 1050 N. 500 East that is expected to be open for business in October.

Kneaders offers sandwiches, soups, salads, pastries and European breads baked in Italian hearthstone ovens. The facility is the 12th store to go up in a four-state development area. It will be operated by franchisees Tui and Teresa Auva'a and Andrew and Shauna Smith.

The Utah-based Kneaders opened its first store in 1997 in Orem, and its original franchisors, Colleen and Gary Worthington, still run that operation. There are nine Utah Kneaders in operation and two in Arizona.

"We are excited that in today's economy we are able to keep pace with our new development plans to take the Kneaders brand into communities throughout the United States," said Andrew Smith, the firm's four-state development agent.

Tui Auva'a said he is looking forward to bringing "some new, truly fresh food options" to the area.
