A smorgasbord, or koltbord, is a collection of the finest culinary offerings in the Scandinavian food culture. The feast is a tradition at any time in Scandinavia but becomes even more festive at Christmas.

A properly prepared and displayed smorgasbord is a work of art and leaves a never-to-be-forgotten impression on those who partake.The tradition of smorgasbord in Norway goes back many centuries and more than likely originated when family and friends gathered for celebrations. Due to the sometimes long and quite difficult journeys necessary for many, these celebrations often lasted for days. Each homemaker brought along her favorite food to add to the overflowing tables.

Today the smorgasbord is a common part of Norwegian culture - not only in homes but in hotels.

To the novice, a smorgasbord at first glance is overwhelming. Many make the mistake of sampling some of each delicacy the first time around. This does not allow one to fully savor the different flavors or the great variety of foods.

Here is a procedure to follow that will help the novice "smorgasborder":
