Tortilla chips are one of the standbys of Mexican cooking. They also hide a lot of fat - a bag of fried tortilla chips can be up to 35 percent oil by weight. So watch for chip-makers to jump on the low-fat bandwagon. A 7-ounce bag of Guiltless Gourmet's Tortilla Chips, for example, has as many chips as you'll find in a 10-ounce bag of fat-fried chips.

You can make your own chips by dipping corn or flour tortilla chips, one at a time, in hot water; drain briefly. Season tortillas to taste with salt, if desired. Stack tortillas; then cut the stack into 6 to 8 wedges. Arrange wedges in a single layer on large baking sheets. Don't overlap wedges. Bake in a 500 degree oven for 4 minutes. With a metal spatula, turn wedges over; continue to bake until crisp and browned (about 2 more minutes). If made ahead, let cool; then store in airtight container at room temperature for up to 5 days. Makes about 4 cups corn chips, about 6 cups flour chips.
