Tournedos of Beef

6 servings

Ingredients:

12 slices beef tenderloin, 2-inches thick or 2-ounce portions

1 teaspoon salt

1 teaspoon coarse black pepper

1 tablespoon butter

Sauce

Pan juices from baking pan

cup flour

cup butter

1 cup water

1 teaspoon beef base

1 teaspoon lemon juice

cup chopped parsley

Season both sides of the tenderloin slices with salt and pepper. In a heavy skillet, melt the butter and brown the meat quickly on both sides. Remove meat from the skillet and place on a baking pan to finish cooking in a 325 degree oven for 5-10 minutes. For medium rare, cook until meat thermometer registers an internal temperature of 140 degree.

For the sauce: Using a whisk, combine the pan juices from the meat with flour and butter and stir constantly over low heat for 2 minutes. Add water, beef base, lemon juice, and parsley and simmer 5 minutes, or until the sauce thickens.
