The La Salsa Mexican restaurant chain, based in Beverly Hills, Calif., and operating in California, Las Vegas and Scottsdale, Ariz., is planning to build at least 10 restaurants in Utah.

Charlie Lynch, chairman of the board, and Chuck Boppell, president and chief executive officer, said that because of the fresh-Mexican restaurant gaining momentum across the country, they are embarking on an expansion plan that will open 60 restaurants in 1995, 120 in 1996, 150 in 1997 and 175 in 1998.The restaurants will feature low-fat food including skinless charbroiled chicken, lean steak and fresh produce. In addition, there will be a salsa bar where customers can flavor the dishes to their own tastes.
