NEW YORK -- Substituting vegetable oil for butter eliminates the cholesterol but not the calories. So, like butter, it should be used in moderation.
There's only one tablespoon of olive oil in a glaze that is quick and easy as a topping for a homemade or from-the-box chocolate sheet cake or cupcakes. The recipe, from the North American Olive Oil Association: In a small saucepan, combine 1 cup confectioner's sugar and 2 tablespoons water. Stir until smooth. Sift 1/4 cup unsweetened cocoa powder and a pinch of salt over the mixture and blend well. Stir in 1 tablespoon of light flavor olive oil. Place pan over medium heat and heat until just warm to the touch, stirring constantly. Add 1 or 2 teaspoons of water to thin the glaze, if needed. With spoon, drizzle glaze over top of cooled cake. Allow to set about 10 minutes.
